One of the problems with established websites is that they are often already indexed by the search engines. If a major problem with the navigation or logical structure is discovered making the necessary changes becomes much more difficult.

It follows therefore that assessments for existing websites cover the same issues as for a new website but concentrate much more on analyzing visitor behavior. If you can identify why and where visitors leave the site then you can look at ways to change the site to keep them for longer.
